EGGPLANT WITH TOMATOES
Ingredients:
5 eggplants
8 tablespoons of olive oil
4 large tomatoes
4 green peppers
1 teaspoon of salt
3 cloves of garlic
Parsley
Tulum cheese or parmesan etc. (optional)
Directions:
• Cut tomatoes in half, sprinkle 1 teaspoon of salt on them, and cook in an airfryer for 10 minutes.
• Peel tomatoes and dice them. Then add 3 crushed cloves of garlic and 3 tablespoons of olive oil, and mix well.
• Peel eggplants in a striped pattern and make deep cuts with a knife.
• Stuff the garlic slices you finely cut into the cuts you made on the eggplants. Coat them with 5 tablespoons of olive oil and a pinch of salt, then fry in an air fryer at 200°C for 15 minutes.
• Place the eggplants on the air fryer tray. Pour the prepared tomato sauce over them and put 2 halved green peppers on top. Cook in the air fryer at 170°C for 20 minutes.
• Grate tulum cheese or parmesan on top if you like, and garnish with parsley. Your eggplants are ready to serve.
• If you don't have an air fryer, you can fry the eggplants in a pan with oil and bake in the oven at 170°C for 40 minutes.
